As a child, Mrs. Bickel played baseball, climbed trees, and adventured with her neighborhood friends. She was only slowed down by annoying and persistent tummy aches. The family Dr. said, "Nervous stomach!" It didn't make sense, but what else could it be?

When she was in her twenties, a friend, who had been diagnosed as being gluten intolerant, suggested she eliminate gluten from her diet. She did and what a change it made! Not only did her stomach aches disappear, but other physical problems she was experiencing went away as well! Mrs. Bickel also learned that gluten intolerance could be hereditary, and sure enough, her family was largely gluten intolerant.

Back in the 1980's when Mrs. Bickel was diagnosed as being gluten intolerant, there were few GlutenFree products available. Most were tasteless, crumbled easily and were as heavy as bricks. They could only be eaten with a large glass of water in hand. Gluten intolerant folks were glad to have even these poor substitutes!

GlutenFree foods have come a long way since then. Even so, most gluten intolerant consumers miss some type of baked good. For Mrs. Bickel it was a great tasting New York style pizza crust that was not heavy or soggy. To satisfy her cravings, she came up with her own pizza crust recipe and has been perfecting it for more than twenty years. She now wants to share her great tasting pizza crusts with you.
